So apparently I missed the boat on sharing the recipe for these Healthy Oat Muffins with you guys a couple weeks ago! My bad! I took all the video and could have sworn I shared it on my Instagram page…but apparently…I did not.
So instead, I figured I’d throw a blog post together so you can see the video of me actually making them! The best thing about these (besides how healthy and delicious they are) is that they only require a few ingredients, are super easy to make, AND can be customized with your favorite toppings.
Ingredients
Before we get started, you’re gonna wanna make sure you have a few things on hand. I did link all of these for you but you should be able to find all of this at your local grocery store.
– Old Fashioned Rolled Oats (I used the Bob’s Red Mill Gluten Free Rolled Oats)
– 3-4 Ripe Bananas
– Pure Vanilla Extract
– Optional Ingredients: Organic Maple Syrup or Raw Organic Honey for sweetening, & Your Choice of Toppings (I used Natural Peanut Butter, Unsweetened Coconut, Berries, and Organic Dark Chocolate Chips

Directions
» Heat oven to 350° & grease mini muffin pan
»Peel and mash 3-4 ripe bananas. (I usually use 3.5 medium sized bananas)
» Add 3 cups rolled oats, 1 tsp of vanilla extract, 1 tbsp maple syrup (optional), and 1 tbsp honey (optional)
» Mix well until all oats have been covered in banana mixture
» Spoon a small amount of mixture into the bottom of each pan cup. Then, layer a small amount your desired topping (the peanut butter in the center is delicious). Then add another spoonful of the oat mixture to creat the top of the muffin.
» Top each muffin with your choice of toppings (you can see in the video that I made several different kinds and sprinkled mine with cinnamon)
» Bake for 15 min or so until they begin to brown slightly. Give them a few minutes to cool and that’s it!
I used a butter knife to skim around the sides of each muffin just to make sure they weren’t stuck, but because I spray the pan, they never stick!
